Fitness Friday: An Easy Healthy Breakfast and a No Nonsense Circuit Workout

Happy Friday guys! Thanks for stopping by for another installment of...

I'm just gonna lay it out there friends...this was NOT my healthiest week of eating. I start the week with such good intentions. I have new recipes I want to try, I have a refrigerator stocked with fruits and veggies for snacking. But somehow, Halloween candy makes its way into my shopping cart. And so does a few frozen pizzas. There's obviously nothing wrong with buying these things for a special treat, but when you find yourself too busy to prepare that new healthy meal you bought the ingredients for, the first thing that comes to mind is, "Well...we can just have that frozen pizza!"

Does this ever happen to anyone else? You have the stuff to make a healthy meal but because you are strapped for time...you end up tossing in that pizza or grabbing dinner on the go? That makes me so angry!

But what a lot of successful weekly meal planners tell me is that it isn't just about planning your menu...it's thinking consciously about the time you will have each day that week. Do the kids have to be up early for school that day? Do they have activities in the evening? How much time will you have to prepare and cook a meal that day?

So I have been going in search of some new HEALTHY crockpot meals for days that I know I won't have a lot of time to prepare in the afternoon/evening. I have also been on the lookout for some quick, healthy breakfast options so that we can start to move away from the usual cereal or toaster waffle and fruit. My cousin Krissy showed me a while back how she makes eggs in her muffin pan. It was such a genius idea! And then I found this recipe on Disney Family Fun!

Recipe of the Week: Mini Frittatas

Mini Frittatas - Step 1

There are so many fun things you can do with this recipe and since my kids will pretty much eat anything in the shape of a cupcake...I know they will enjoy these too. And the best part is that you can make a big batch and have extras to heat up for mornings on the go!

Workout of the Week: No Nonsense Circuit

The reason I chose this quick little circuit for my workout of the week is because it came in very handy for me yesterday. My hubby has been on some major overtime at work and when you are in charge of your two young kiddies from the minute they wake up until the minute they go to bed...it's hard to find time to get in a good workout. So you have to get creative.

We have been blessed beyond belief with our weather lately. I know our days at the park are numbered, so I've been trying to get the kids outside as much as possible. The great thing about the park is that it is an easy place to do some circuit workouts while the kids play. This No Nonsense Circuit workout is one I found a while back and it's easy enough to do just about anywhere...

No Nonsense circuit.

So yesterday, my sis-in-law and I took the kids to the park and while they played, we did our best to squeeze in some of these moves. I am sure we looked like a couple of goofballs doing our burpees in the middle of the park...but oh well. The kids actually had a lot of fun doing some of the moves with us and man...can they hold a plank!!

Weekly Recap:

Truth be told, I've been a bit of a slacker the last 3 days. I came off a great 10 mile run on Sunday, a fabulous butt-kicking Yoga class on Monday and then gave myself a much deserved rest day on Tuesday. But then Wednesday came...and I half-assed an ab/arm workout on the floor while I watched TV. Yesterday, I managed to workout at the park but it wasn't as serious or intense as it should have been. We mostly played around.

On one hand, I am proud that Dana and I even attempted to workout at the park. We could have sat and drank coffee and talked the whole time...but we didn't. We finally got our butts off the bench and got our heart rates up. And today, I am hoping to get in some more yoga and a run before our next 10 mile run this weekend. Whew!! The half marathon is now officially LESS than a month away. Time to kick it into gear big time!!! Hold me accountable this week friends!!!

But before I go, I just want to give a HUGE

CONGRATULATIONS to Brooke for running her first 5K!!!

Brooke is a part of my Operation LGN group on Facebook {and a long time blog friend} who started C25K earlier this year. Brooke completed her first race with personal best time and I am SO SO PROUD OF HER!!!!

So how was everyone else's week of health and fitness?? Did anyone reach {or set} any new goals??

These Boots Were Made for Walkin...

My kids are so freaking spoiled.

Honestly...they have the BEST grandparents, aunts and uncles who constantly shower them with love, affection, sleepovers...and fashion.

Or maybe that last one is specifically Aunt Di :-) Ever since Addie was a baby, Di has LOVED dressing her up.

It was Aunt Di that bought Addie her first camo skirt...and she rocked the hell out of that thing.

It was Aunt Di who bought Addie {and Blake} their first John Deere t-shirts...

And she wore it every time she went to play on the farm...

It was Aunt Di that bought Addie her first cowgirl outfit...

And taught her the importance of blinged out belt buckles...

And today...it was Aunt Di who surprised Addie with her first pair of REAL cowgirl boots!!!!

Tell me these are not the cutest things you have ever seen??!!! I can't even handle it.

And apparently neither could Aunt Di, because she had to get her own pair to match :-)

I just love that these two girls have their own special bond. It warms my heart.

So Aunt Di...thank you SO MUCH for spoiling Addie once again with the thing she loves most these days...shoes!!! She wore them to ballet tonight and asked if she could sleep in them. I think they are a hit :-) Love ya bunches!!

90 Days to Christmas: Making a List...

So is everyone having fun following along with 100 Days to Christmas?!! I know I am and it's not too late for you to join in on fun! You can still download a copy of the ebook here and of course, you can always follow along on Twitter and Facebook too :-)

Today's 100 Days to Christmas challenge is to put together your "Cards to Send" list. ListPlanIt.com has a list available for download, but since I am creating all of my own holiday printables this year...I thought I would share the "Cards to Send" list I created!!

It coordinates with the other holiday printables I have done so far and you can download them all by heading over to ThePolkaDotPosie blog :-)

So...Christmas cards.

What can I say? Sending and receiving Christmas cards is one of my FAVORITE parts of the season. I love seeing everyone's latest family picture and I ALWAYS keep all of my photo cards in a little memory box because it is so fun looking back at them.

But receiving is the easy part. Getting your own card together sometimes takes a LOT of work and preparation, especially if it requires getting a family picture. Between deciding on outfits, picking a location and getting your kids, pets or both to cooperate...it's an exhausting process!! And then once you have the picture, you still have to decide on a card and have them printed. By the time you actually get to sit down and address them...you are spent!

So...the GREAT thing about doing this task early is that when you do finally sit down to address those beautiful cards you put so muck work into...you will be ready to go with your list of recipients!

I don't know about you, but our list of recipients has changed a lot over the years. There is constant adding, deleting and updating going on so I have found it very helpful to create a new list each year. I first write in all of the friends, family and colleagues I plan to send one to and then I am left with plenty of space to add in any new friends or family we receive cards from throughout the season. That way, when I go to create next year's list, I will remember to add them in :-)

I know a lot of people prefer to keep their Christmas card list on a spreadsheet and we do have one for our electronic address book, but I still enjoy having an easy place to jot down names and get a simple count of how many cards I will need to order that year.

So that's today's challenge!!! Start making your Christmas card list and see what number you are up to! I started making mine and I am SHOCKED by how may cards I will have to order this year. Do you all send a card to every family, friend and colleague? Where do you cut down on your list and how do you decide who gets one and who does not?

And I just have to ask...do you follow the "If you don't send me a card this year I'm taking you off my mailing list" rule???

Sometimes & Always

Because this just works for today :-)

Sometimes: I finally get a good night's sleep and think, "I am crossing EVERYTHING off my to-do list today."

Always: 10 new things are added to the list before 10:00 am and I find myself re-writing the same list the next day :-)

Sometimes: I plan on grading a few papers each night so that I can take my time and not get overwhelmed.

Always: I realize it's the day before class and I've only completed 2 of 24 papers. Sigh...

Sometimes: I don't want to work out.

Always: I feel so much better about myself {and life} when I just suck it up and do it.

Sometimes: I bake a batch of cinnamon spice cupcakes and promise myself I will only have one.

Always: All the cupcakes are gone within two days. I am not saying I ate them all...but...you know.

Sometimes: I swear I'll be a better blogger.

Always: I am apologizing a week later for being a crappy blogger :-) So again...sorry for being a crappy blogger. Ha!

Fitness Friday: Healthy Mac & Cheese and a Fabulous New Ab Workout!

Good morning everyone!! It's FRI-DAY which means it's time for...

Woohoo! I first want to thank all the WONDERFUL ladies that linked up with me last week!!! It was so fun reading about your weeks and getting some new recipes and workouts to try. This week I have a couple of my favorites for you :-)

Recipe of the Week: Mac & Cheese with Cauliflower

Macaroni and Cheese With Cauliflower

I am a comfort food junkie. I always have been. No matter how hard I am trying to lose weight or eat healthy...I just can't give up my mac & cheese!! So a long time ago, I found this delicious recipe from Real Simple magazine and it is always my go-to Mac & Cheese recipe when I am trying to be smarter about eating. The best thing about it is that the kids {and Eric} can't tell the difference!! Now that the weather is getting cooler, it's the perfect time to give this bad boy a try. Make sure to let me know what you think :-)

Workout of the Week: Sleek and Slender Abs

I know, I know. Posting from the Tone it Up girls two weeks in a row. But seriously guys...they are my favorite for at home workouts!!

For the past month, I have been doing the 300 ab routine you've probably all seen floating around Pinterest and the blog world. It's a great routine, but I am BORED with it!!! So when the TIU girls posted this workout on Tuesday, I just had to try it. I am planning on doing it again tomorrow too because it is AWESOME!!! Such a fresh new ab workout...I love every move. And I can still feel it in my abs from two days ago :-)

Weekly Check-In:

Well this week I'm still hitting it hard with half marathon re-traning, which means I had another long run over the weekend. It was a 9-Miler and quite possibly the BEST practice run of my life. For one thing, my sis and I ran at a 10:04 pace, which is the best we've ever run for a long distance!!! But I think the reason this was such a great run for me is because I felt good all 9 miles. I felt strong, I felt happy and at the end, I felt like I could have gone 10 miles. I am really starting to notice how all of this cross training and yoga is changing me and I really wish I would have done all this for my first half!!

But I have to let that go. I get a second chance and that's all that matters. We have 10 miles coming up this weekend and I am actually looking forward to it!!! I hope the fall weather sticks around :-)

So...how was everyone else's week?? I would love for you to link up with us today!!

Happy Birthday Papa Steve!

Today is Papa Steve's Birthday, but we actually celebrated with him on Sunday night. It was a great way to end our weekend of fun. We went to Aunt Dana and Uncle Kevin's for some yummy Portillos Beef and then we all played dress-up. Ha! Dana and Kevin have the best Hallween bin at their house and the kids (and big kids) had the best time trying on the wigs :-)

I didn't do a very good job taking pictures that night. I think I was just too buys laughing at the kids and sipping my wine :-) But I did get a cute video of all the kids singing to Papa Steve :-)

I love Dana screaming "NO" when Nolan was about to blow out the candles. Haha! Too funny :-)

Well we hope you had a great birthday Papa Steve! We love ya bunches!!

Addie's Weekend in a Nutshell: Sleepovers, Carnivals & Really Big Snakes

I am going to dedicate this week's Weekend in a Nutshell post to Addie because she truly had the best weekend EVER!!!

On Friday morning, Addie was the special person at Preschool. She got to bring a snack and a toy for show-n-tell...but the part she loves the most is getting the sticker and sitting in the "special seat". She talked about it ALL WEEK LONG...but definitely not as much as she talked about where she was going on Friday night.

My brother Ryan made a deal with Addie a few years ago. He said as soon as she could wipe her own butt, she could have a sleepover at his house. Haha!

Well it's been a while since Addie learned to wipe her own butt, but when Baby Owen came along...it was just too busy for a sleepover. But now that Baby Owen isn't a baby anymore (tear...) Uncle Ryan and Aunt Meagan decided it was finally time for that sleepover!!! And they had a lot of fun in store for her.

So Friday night, I took Addie up to meet Uncle Ryan at work and she was all smiles. As he was buckling her into her carseat, she was already listing off the things she wanted to do...like make homemade pizza :-)

Well Aunt Meagan had that covered :-)

After their yummy dinner, they took a walk to the park...

And then came home and made some crafts...Uncle Ryan too...

And then it was cuddle time. I warned Ryan that Addie would definitely weasel her way into his bed at some point, so he just decided to cuddle with her from the beginning :-) Meagan tells me they both fell asleep watching cartoons.

The next day, Uncle Ryan and Aunt Meagan took Addie to their company's Family Picnic. They go all out for this event with carnival rides and a petting zoo. Addie and Uncle Ry rode the ferris wheel...

And rode some ponies...

And this guy just hung out and enjoyed the view...

And cruised around like a big boy :-)

Addie as already asked me about 100 times when she gets to go back to Uncle Ryan and Aunt Meagan's for a sleepover. Something tells me they will both want her back real soon :-)

***

After the family picnic, I raced to pick Addie up because we had her cousin Brennan's birthday party too!! We made it just in time for Brennan's BIG surprise. Here are all the kids waiting to see who was coming...

And it was the Reptile Guy!!!! Brennan was so excited and Mr. Reptile brought all of his favorite friends...

This is the same guy that did Nolan's birthday party in March, so all the kids were familiar with him and the reptiles. They were just as fearless as ever!!

And of course, their FAVORITE reptile of all...Chiquita the snake :-)

At Nolan's party, every other kid was all about the reptiles except for Blake and Cole. The two of them could have really cared less. But this time...those boys were all over these things!!

Every time you looked, Blake was petting something. Chiquita was definitely his favorite.

But then in true Blake-n-Cole fashion...they were off playing with cars in no time :-)

As you can see, Brennan's birthday party was a smashing success!

And after being special person, having a sleepover, going to a carnival/petting zoo AND a reptile birthday show...Addie was SPENT when we got home. I have never seen her crash harder for bedtime. She also slept in until 8:00 on Sunday, which is huge for her.

So thank you Uncle Ryan, Aunt Meagan, Baby Owen and Mr. Reptile guy for giving Addie the best weekend ever! And it wasn't over yet!! We also had Papa Steve's birthday party yesterday, but we will save that post for another day :-)

Fitness Friday: Toned Arms & Some Apple Cinnamon Steel-Cut Oatmeal to Kick-off Fall

Happy Friday, friends!! Thanks for stopping by today for...

I am super excited to be back this week because word on the street {or Twitter} is that I am going to have a few ladies linking up with me today to share some good healthy fun!! Woohoo!!

Like I said last week in my very first Fitness Friday post...the reason I am starting this little weekly segment is because I have truly enjoyed sharing all of my fitness goals over the years. The support and encouragement I've received from friends and family is the ONLY reason I was able to succeed. I find that when it comes to exercising and eating right...I am only successful if I am held accountable. I need that community of buddies to keep me strong and keep me motivated...especially on days when I DO NOT feel like lacing up my running shoes or passing up cake for carrots.

And at the same time, I have also found that when you start sharing goals {and all of the successes and failures that go along with them}...it starts to inspire others to set their own. My friend Steph wrote me a lovely email after I ran my half marathon a few months ago and she told me that my posts have inspired her to get healthier. I know I am not the only reason that Steph decided to get healthy. That girl is DETERMINED and I have never seen someone so dedicated. But just reading those words and realizing that I may have sparked an interest in someone else made me really happy. And proud :-)

So that's really what this link-up is about. Motivating ourselves and inspiring others. We can share healthy recipes, post our new favorite workouts, talk about the week's accomplishments, or the week's failures. We can weigh in or not weigh in. We can do whatever we want!!!!

For me...I have a few things I want to do each week. I would like to post 1 recipe, 1 new workout, and a re-cap of my week. And of course I'll throw in any other little fun tid bits I come across along the way :-) So here goes!

Recipe of the Week:

I have a confession...

I kinda hate oatmeal.

I don't know if it's the consistency, or the fact that it's like hot soggy cereal, but I have never been a huge fan. Even when I was breastfeeding both kids and was eating it like crazy to help with my supply, I would have to gag down every single bite. I just couldn't get into it.

But then I started running. And reading running magazines. And when you are trying to get in shape and eat healthy, you can't avoid the word "oatmeal" for too long. So one day, while I was reading Women's Running, I saw a recipe for steel cut oatmeal that was filled with fruit, nuts, brown sugar and everything else yummy you could think of. Suddenly...oatmeal wasn't sounding so bad! So I went to the store and bought all the ingredients.

But I never made it.

Fast forward to this summer when I was doing some serious training for the half marathon. I was pinning away a bunch of healthy meals and I came across the fabulous recipe pictured above. I figured it was finally time to give this a try and I have to be honest friends...it was delicious!! And the best part is that you throw it all in the crockpot at night so when you wake up in the morning, your whole house smells like apples and cinnamon and you have a healthy, nutritious breakfast waiting for you!

And since it's Apple season, this is the best time of year to try it. TheYummyLife gives beautiful step-by-step recipe instructions with pictures so be sure to head over there to pin it or print it. You won't be sorry :-)

Workout of the Week:

Okay...clearly I am a little obsessed with the Tone It Up girls. I post about them all the time but really guys...their workouts are fantastic!! And what I love the most about their routines is that you can do them at home with minimal equipment.

Here is one of their latest routines and since I have really been trying to work on my arms, I thought it was the perfect workout to share!! You can find the video and step-by-step here as well :-)

Weekly Recap:

Only a few things to report this week. I am now 6 weeks away from my second half marathon so I have been plugging away at my runs.

Just this past weekend, I went out for my 8 mile run alone. I was a little worried about how I would do, especially since I am used to running with a partner, but the run went FANTASTIC!! I did all 8 miles and kept a 10'15 pace. I feel so much more confident this time around in training. I can only hope I will feel that way for all 13.1 miles :-)

In other fitness news, I have officially reached my goal weight and am in all my jeans!!! Man it feels SO GOOD to be done losing weight. I know the bigger challenge now will be to maintain my size, but I am hoping that my new workout regimen and healthier eating habits will make it a little easier this time. We will see!!!

***

Well that's all I have for this week guys! PLEASE feel free to link-up and join us. You can grab the button on my sidebar :-)

Enjoy your weekend friends!

So What...Thursday??

So I sat down last night to write this post so that I could link up with Shannon for So What Wednesday today...

So What Wednesday

And didn't realize until I'd written the ENTIRE post that today is in fact Thursday.

Thursday, people.

I am an entire day off somehow.

Story of my life.

So even though it isn't Wednesday, I am still going to link up and say

SO WHAT IF...

* I bought Addie's Halloween costume in August. I had a Disney store coupon that was about to expire and let's be honest...the girl does make an adorable mermaid. Here is our little photoshoot from the other day.

* I'm letting Blake go as Lightening McQueen for the second year in a row. The costume still fits and he wore it for about 11 minutes last year. Also, wearing it 2 years means I can now justify the $30 I spent on it. And speaking of Blake...

* I am about 3 weeks overdue in taking Blake for a haircut. Seriously...it's starting to get crazy. But I just dread it so much!!

* I've already had 3 pumpkin spice lattes this year. I mean that's sad...they just came out last week. But at least I am in good company...

* I have a drawer full of Scentsy but when fall rolls around...I just can't let go of my Yankee Candles.

* I literally had 3 pairs of Frye boots in my house at once. The pair Eric gave me that didn't fit, the pair I reordered in extended calf, and then the pair I found on Amazon for 2/3 of the price!!!! They had a great coupon going on that worked on Fryes and when you consider that plus no sales tax...HUGE savings! I have since returned the other two pairs and I am just working up the courage to take the tags off the third pair.

* I have a million planners, binders and lists...but I still can't seem to get my shit together lately. CLEARLY!!! I thought it was Wednesday for crying out loud! I don't know if this stupidity is because of the kids, my lack of sleep, our new back-to-school schedule, or all of the above...but I hate feeling like this. I'm a hot mess.

And finally...

* So what if I plan on drinking coffee all day until it's time to switch to wine. Maybe It'll give me some clarity :-)

Ballet Shoes & Tap Shoes

Tonight, Addie and Nia had their very first Ballet/Tap class of the season. They wore their matching little Disney Princess tutus and held hands the whole time. I think it's safe to say that they were happy to be back in the studio.

And this year is SUPER exciting for the girls. For one thing, it's their 3rd year in ballet so they are little pros, but in addition to that, they are also doing TAP!!!

Now our dance bags are full like "the big girls"because we get to carry not one but TWO pairs of shoes to class each week. The girls feel so special :-)

I am actually really excited for the dance year ahead. The girls are both so psyched about Tap and now that they are comfortable and happy in their studio...they genuinely look forward to class each week. And that makes me happier than I can even say :-)

So here's to another year of great fun for my babies!!
